"Cochon de Lait" a l'Afrique, Black Eyed Pea Croquette, Caribbean Mango Salsa: The Main Course at Voodoo, for the 5 Star Restaurant Wars Challenge

This month's edition of the 5 Star Makeover Challenge is a real doozy: Restaurant Wars. Two months ago, our hosts, Lazaro of Lazaro Cooks! and Natasha of 5 Star Foodie divided participants into groups of three, tasking us each to create a virtual restaurant based on a single theme or ingredient. Each team member would be responsible for one of the three courses.

And am I ever happy with the team members fate dealt me. Jessica of Cajunlicious and Maya of Foodiva's Kitchen were fabulous to work with, and it didn't take us too long to hammer out a name, theme, and dishes for our restaurant.

Sweet, Juicy, Spicy: Shrimp & Chicken Sausage Jambalaya

Allright, everybody - show some love for Poppa Trix. He's been wanting to do another post here ever since he ate his way across Manhattan, his home town.  I could go on, but I don't want to be accused of Bogarting a post, so, without further ado ... give it up for Poppa Trix!!

About halfway through a recent spate of 100-degree days Trix declared that she was through with cooking. Hard to believe, but between the sweltering kitchen at home and the even hotter one at the cafe where she works she'd had enough. So it was decided that I would make our next blog-worthy meal and turn in one of my annual guest posts. But by the time I was ready to mise my place, Trix was back in business. It seems that even though she couldn't stand the heat you couldn't keep her out of the kitchen! So the following pile of Creole/Cajun goodness was truly a joint effort.

Cajun Chicken and Sausage Gumbo for the International Incident Gumbo Party

International Incident Gumbo Party
In a completely uncharacteristic move, I am tardy for the International Incident Party, hosted as ever by the lovely and talented Penny aka Jeroxie. Late for a gumbo party no less! This is a truly shocking move given my love for all things Gulf Coast, particularly New Orleans and the surrounding Cajun country. I was married in a New Orleans voodoo temple after all, not to mention that last year I even made gumbo z'herbes in a guest post for none other than Penny herself!

But better late than never, right? And anyway, gumbo is even more delicious the next day.

Creamy Creole Crab Pots: Anniversary Dinner, the Second Way

For those of you who were expecting me to cook up a Creole feast for my anniversary surprise for Poppa Trix, I apologize. I  have just one dish to share with you - but what a dish it is! This little pot of goodness is loaded with sweet (local and sustainably-caught) Maryland lump blue crab meat that's carried to your mouth in a creamy sauce of mushrooms, shallots, thyme, onion, Amontillado sherry and (please forgive me, seafood purists!) Parmesan cheese, topped off with a lid of crunchy phyllo pastry.

The (Slightly) Lighter Side of Brabant Potatoes

I first tasted brabant potatoes -  garlicky, buttery, bite-sized bits of glorious, crunchy starch -  a little over a year ago at Galatoire's in New Orleans. As addictive as they were,  I tragically wasn't able to manage more than a few bites of this classic Creole side dish, as I was already full by the time they arrived at the table. Between the Louisiana seafood festival, the Creole tomato festival, lunch at Commander's Palace, several gumbos, and a (meatless) muffaletta, I had, truth be told, been full for days.

Fit for a Queen: Tomato Salad, New Orleans Style BBQ Shrimp, and Bread Pudding with Whiskey Cream Sauce

It seems only fitting that my husband should be the author of my very first guest post, considering he takes all of the amazing photographs on my blog.  And shortly after tucking into this scrumptious birthday feast he concocted for me, I realized we had found the perfect subject for him to write about!

Anyone who knows me at all knows that I've had a lifelong love affair with the city of New Orleans. One of the luckiest things about my adult life is being able to share this love with Trix. The first bunch of times I visited the Crescent City my palate was more in the po boys / beignets realm of New Orleans cuisine, but as Trix and I explored the city together we were able to share many culinary firsts: Commander's Palace, K-Paul's Louisiana Kitchen, Mr. B's Bistro, Galatoire's, and many more. Eating the food of New Orleans has played a large part in our own growing enthusiasm over cooking at home.
