Beans & Cornbread (had a fight ... but don't you worry, it worked out allright!)

In the famous Louis Jordan song I quote above, beans and cornbread start out fighting, but by the end of the song, they become best of friends and realize that they go together like "hot cakes and molasses," "strawberries and shortcake," and "sour cream and biscuits." Silly beans and cornbread! I knew it all along.

Each Sunday, my husband makes a delicious frittata using the week's leftover vegetables. It's definitely one of my favorite brunch dishes, and part of the fun is that I just sit back and sip a mimosa or pomegranate & prosecco while Poppa chops, preps, and cooks it up.  

Luscious Jalapeno Cornbread

Until making this dish, I hadn't baked for years. I had given up on it. At best, everything I made  turned out crooked, deformed, or messy-looking. But recently I got hit hard with a hankering for jalapeno cornbread, and I figured I might as well give baking another shot.
